Grandma's Chocolate Pie
Ingredients:
9-inch pie crust
Filling:
4 tablespoons of cocoa
3/4 cups of sugar
5 tablespoons of flour
1/4 teaspoon of salt
1 1/2 cups of milk
2 egg yolks, beaten slightly
1/2 teaspoon of vanilla
1 tablespoon of butter
Meringue:
5 egg whites, at room temperature
1/2 teaspoon cream of tartar
10 tablespoons sugar
Directions:
Bake pie crust (use your own recipe or use a store-bought and follow directions on package)
Mix sugar, flour, salt, cocoa, eggs and milk with a whisk. Cook while stirring on medium until it bubbles and thickens, about 5 to 10 minutes. If it becomes lumpy, just beat out the lumps.
Remove from heat and stir in vanilla and butter. Pour filling into baked crust.
Cool for 2 hours or up to 24 hours.
In a metal or glass bowl, beat egg whites at high speed with a mixer until frothy. Add cream of tartar and beat whites until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating at high speed for 2 to 4 minutes or until stiff peaks form. Add vanilla extract and beat just until blended.
Spread meringue on top of filling; bake until meringue is lightly browned, 5 to 7 minutes.
Serve immediately.
