Southern Fried Chicken
Ingredients:
3lbs whole chicken cut up
2 cups of flour
3 eggs
1/2 of a small onion
Michelle's Seasoning
1 quart vegetable oil (or can of shortening if hydrogenated oil doesn't bother you)
Method:
In a large pot or kettle, fill about half full with oil or shortening and toss in the a few pieces of the onion. Heat to about 350 degrees.
Pour flour into a large bowl. In a separate bowl, beat the eggs.
Starting with the dark meat (because it takes longer to cook) dip chicken into the egg, then coat in the flour. Dip into the egg again and apply the Beachbilly Seasoning to the chicken. (until it looks like the chicken is almost coated in pepper) and then coat in the flour again.
Place the chicken into the oil. Do not over-crowd the pot.
With EACH NEW BATCH…Repeat the process of coating, seasoning, adding onion and cooking. It is VERY important that you do not coat the chicken until just before putting it into the pot.
Place on paper towel-lined plate.
Dark meat takes 15 minutes to cook.
White meat takes 10 minutes to cook.
